Thomasina Miers: Pomegranate Meringues with Pistachios


Maman is going through a Thomasina Miers addiction at home. So before Christmas it was her Easy-Peasy-Not-Quite Christmas cake on the baking list, and for New Year's Eve, maman and I set to work on these celebratory pomegranate and pistachio meringues.


With the decadent colour explosions from the deep red pomegranate seeds and the vivid green pistachios which cover the meringues and bury themselves inside them, they matched the NYE fireworks perfectly. And they tasted rather fabulous. What more could you ask for at to start the new year?!
