Wednesday night was baking night. After the hideous, heart-breaking news from Paris, I turned to my therapy: baking. Baking a cake filled with spices. With extra frosting on top.
In a weak attempt to fit in with all those New Year's Resolutions (not mine - but maybe your's), this cake is filled with olive oil and honey rather than butter and sugar. A parsnip and a carrot also go in there too. So that makes it healthy, right? Then whip together some cream cheese and butter and smother it on top... Less healthy. But it's okay, because it's January and to get through this dark, depressing month we're going to need a bit of frosting every now and then.
This wintery loaf, from the wonderful Kathryn at London bakes, is a little ray of sunshine in the midst of an exhausting week.
