Ginger Flapjacks


You know those times when you need something comforting and sweet to nibble on with a cup of tea? But there's a slight problem in that you have next to no ingredients; no desire to go shopping; and no energy to stand in the kitchen for a prolonged period of time. 


It is those times when I always turn to flapjacks. And so it was after very little sleep, in athe short break between rugby matches on Saturday afternoon (when all I actually wanted to do was doze in the sun), that I quickly threw together these flapjacks to go with a much needed pot of tea.


Flapjacks are a saviour. Made with the simplest of ingredients, creating very little washing up, and ready within half an hour. They always fill that important place of emergency treat in life.

Ginger Flapjacks

300g oats
200g golden syrup
170g butter
4 tbsp light brown sugar
tsp ground ginger
tsp ground cinnamon
knob of fresh ginger, finely chopped

1 x square cake tin or baking tray

1. Preheat the oven to 180°C.
2. Melt the golden syrup, butter, sugar and spices in a pan until the butter has melted.
3. Stir in the oats and fresh ginger.
4. Bake in the oven for 20-25 minutes until golden and just browning round the edges. Leave to cool before cutting.
